	The cipolline Borettane is an Italian pearl onion known for its flat, saucer-like shape. Previously produced only in Italy, these unusual and elegant onions are now grown on our farms. Our cipolline range from 1" to 3" in diameter and are available year-round in most supermarkets. The taste of cooked cipolline is uniquely mild and sweet. We recommend the following easy and tasty recipes: 1/3 cup butter 12 - 14 large cipolline onions 2 tablespoons brown sugar 2 teaspoons cinnamon 1 cup water (or other liquid) Peel and core the cipolline onions. Melt butter in large baking dish. Place cipolline onions in dish, cored side up and put brown sugar and dash of cinnamon in center of each. Add liquid to dish, cover with foil, and bake 45 minutes at 350 degrees. Remove foil and bake until tender. Syrup will form to spoon over the cipolline onions. Serve in warm baking dish. Serves 6 to 8. 1/2 cup butter 12-14 large cipolline onions 4 tablespoons sugar 3-4 ounces currant jelly 2 teaspoons sherry wine Peel and core cipolline. Melt 2 tablespoons butter in sauté pan. Sauté half of the cipolline onions for about 10 minutes and remove to sprayed large baking dish. Melt 2 tablespoons butter in pan and sauté remaining cipolline onions. Add these to the baking dish. Sprinkle the cipolline onions with sugar. Spoon currant jelly into center of each cipolline onion. Melt remaining butter with sherry and pour over top. Cover with foil and bake at 350 degrees for 45 minutes. Remove foil, continue baking until tender and syrup begins to form. Serve immediately. Serves 6 to 8.
